Serves 2
200g firm tofu, thinly sliced
2 cups watermelon cubes
1 cup edamame
½ avocado
2 spring onion, finely sliced
⅓ cup mint leaves
2 tbsp furikake
1 cup steamed rice for dressing
1 garlic clove, grated
2 tsp grated ginger
¼ cup light soy
2 tbsp mirin
1 tbsp rice wine vinegar
1 tsp sesame oil
Whisk dressing ingredients in a small bowl. Divide the rice between two bowls and top with the tofu, watermelon and edamame. Cut the avocado in half and place in the bowls. Drizzle with the dressing and garnish with furikake and mint leaves.
